What was your first industry job?
my first serious job was my apprenticship at the sydney opera house but like many of us did a stint at Mcdonalds whilst at school.

Current job?
My current job is Exectutive Chef in charge of food and beverage on Hayman.

Best thing you like about your current job?
Having a holistic view of the operation now that I'm in charge of the entire food and beverage department.

Worst kitchen exprience?
I try and forget the bad expriences and concentrate on the positives.

What is your favourite ingredient right now?
Sunchokes.

A 45 margaux, if that is not on the list a nice pinot will suit.

To many to mention over the years.

No reservations.

Industry hang ups - What is your pet hate within the hospitality industry.
I think after 25 years I have come to terms with the industry.
